My name is Esther. A wife, a sister and a blessed mom of five lovely children. Am a Kenyan-American by nationality and currently residing in the United States.
As a Pediatric Nurse , I juggled alot between my full time work schedules and mom duties which left me with less or minimum energy. As a result, I turned into eating whatever came my way and that left me overweight and unhealthy.
I unfortunately associated healthy food with pain and unhealthy food with pleasure.In the middle of this I lost my dad through a heart attack. His passing was a wake up call for me especially knowing that my health history has forever changed and I will be considered at risk.I just didn’t like the way I felt , I was uncomfortable in my own body, had no energy and lack of sleep. I needed to do better for the sake of my family and I.
Cooking has never been my cup of tea. Having a vision in mind made it alot easier during tough time and it enabled me to track my progress. I am my own biggest fan and supporter. I dont focus on how hard my changes will be but rather on finding a way to make them work in any ways. I took baby steps and motivated myself to cooking healthy and eating more at home. Healthy diet doesn’t mean a perfect diet I learned. My love for healthy eating didn’t happen at once, I started familiarizing myself with variety of foods. I also started becoming more active and enrolled at the planet fitness center. I realized support is an important part of a successful weight loss program.
The main idea behind Esther’s Kitchen is to eat clean and healthy foods without using processed and canned goods. Natural seasonings and herbs are used. My flavors are insipired by natural ingredients from all kinds of foods, fruits, vegetables, whole grains and nuts. I have also incorporated vegan recipes which tastes great. In those recipes I included protein, good cooking fat, whole carbs, and vitamins.
The recipes are personalized and organized to fit what your body and mine requires to loose and maintain healthy weight. With these recipes you get your energy back, flattens the belly with added 30 minutes of core exercises. These are easy to make recipes that you will enjoy and have an assurance your are eating the best for your health. These recipes will change your old way of thinking that healthy food is tasteless, bland and boring. For me, healthy food going into my body translates to a healthier state of mind. I feel better physically, mentally and emotionally if i am getting the proper nutrients.I have felt the effects of both lifestyles and truly, the health food way is better. I really think the exercise and eating healthy go hand in hand. I have lost weight, full of energy ,sleeps better and have maintained healthy weight by just utilizing my easy to follow recipes.Hippocrates had right when he said,”Let the food be thy medicine and medicine be thy food”. Everything that we eat is either fighting the disease or fuelling it because you are what you eat.
